Get ready for a flavor-packed twist on classic meatloaf with this Korean BBQ-inspired recipe.

Korean BBQ Meatloaf

Cook time: 60 minutes
Makes: 1 meatloaf
Serves: 8

Ingredients

For Meatloaf:
1 ½ lb. ground beef
1 lb. sweet pork
1 C sweet onion, chopped
2 T garlic, minced
2 C panko
2 eggs
2 T fermented gochujang
1 T roasted red chili paste
1 T Korean chili flakes
1 T galangal (or substitute dried ginger)
1 T coconut palm sugar (or substitute brown sugar)
2 T soy sauce

For Glaze:
10 oz. apricot jelly
2 T Sialang honey (or substitute local honey)
3 T kecap manis (or substitute ketchup)
8 T fermented gochujang
1 T Korean chili flakes
2 T sesame oil
1 t galangal (or substitute dried ginger)
1 T soy sauce
1 T coconut palm sugar (or substitute brown sugar)
4 T rice vinegar

Here’s How
  1. In a large bowl, combine all of the ingredients for the meatloaf and mix until well combined. Rest the meatloaf mixture for 30 minutes or until the panko has softened.
  2. Meanwhile, in a separate bowl, whisk together the ingredients for the glaze sauce. Separate about 3-4 tablespoons into a second bowl and set aside.
  3. Preheat the oven to 350°F. Spread the meatloaf mixture into a greased loaf pan and mound over the top. Brush 3-4 tablespoons of the reserved glaze on top of the meatloaf. Bake the meatloaf for 40-45 minutes, until the internal temperature reaches 140°F.
  4. While the meatloaf is cooking, pour the rest of the glaze into a sauce pot over medium-high heat. Bring to a simmer and reduce for 20-25 minutes, until the sauce has thickened significantly.
  5. When the meatloaf reaches an internal temp of 145°F, pour the glaze reduction over the top of the meatloaf. Return to the oven and continue to bake until the internal temperature of the meatloaf reaches 160°F.
  6. Rest the meatloaf at room temperature for 30 minutes prior to cutting to fully set the meatloaf. Sprinkle on sesame seeds and green onions for garnish. Serve warm and enjoy!
