Generational recipes served fresh and on demand, only at Niko’s Gyros To-Go.

At the Glista family’s newly opened Niko’s Gyros To-Go in North Ridgeville, people craving fresh, authentic meals, instead of hours spent at the stove, are delighted by the satisfying, made-to-order Mediterranean fare. Few cultures cherish food quite like the Greeks. Born from a land of sun-ripened tomatoes, briny olives and time-honored traditions, Greek cuisine is more than nourishment—it’s a way of life.


Meals are meant to be celebrated, with recipes passed lovingly from one generation to the next. 


The Moulagianises is no different. Their family story, and their food, is rooted in a deep appreciation for fresh ingredients and family connection.


At Niko’s Gyros To Go in North Ridgeville, that philosophy comes to life in every dish. Owned by Richard and Koula Glista (she is founder Niko’s sister), the restaurant is an extension of family legacy, dating back to 1968 when her parents immigrated here from Greece.


“Newly married at 17 and 22, they came with one suitcase, a few words of English between them, and determination to give their family a better life,” says Koula. 


That American-dream style of work ethic, and a love of their homeland’s food, were passed down to Koula and Niko. Today, the siblings continue to honor their heritage by using their grandmother’s secret recipe for Tzatziki sauce as well as their famous gyros and hummus.


Koula and Richard opened their popular to-go concept eatery several months ago, joining sister operations in North Royalton (dine-in) and Brunswick and Broadview Heights (to go). Though the basic menu is the same, there are variances in some dishes and each location’s hours.


“At every location, central to our mission is a commitment to scratch cooking,” says Koula.


“Nothing is pre-made. Each order begins the moment it’s placed, ensuring freshness and great taste in every bite.”


Since the family generously sent me home with a few dishes featured in the photo shoot seen here, I can personally attest to the amazing flavors. My own family was over the moon about the rich and deeply satisfying trio of hummus dips, pizza and the ultra-smooth tzatziki sauce. Their grandmother would strongly approve.


Creativity and Catering

If you want to be authentic, you’ll pronounce “gyro,” which is Greek for “turn,” as “year-oh.” 

Richard makes his gyros just like they’ve been made for a 35 years, continuously turning the meat on a vertical spit and shaving the edges to create the softest, most flavorful meat.


Alongside his classic dishes, you’ll see some inventive culinary twists.


“People love our BLT gyros, blackened salmon, chicken club and smoked corned beef versions,” says Richard. “Everyone finds something to enjoy, including pizzas, half-pound Angus burgers, grilled chicken sandwiches, wings and, of course, baklava.”


Koula says one of the most common things they hear from customers standing looking at the menu is “I want to try everything,” which is why they enjoy so much repeat business.


With Browns season nearly here, and the holidays around the corner, the family reports its catering business has grown exponentially.


“People love our mini gyro packs (in quantities of 25),” says Richard. “We customize options to fit any event, including meats by the pound, fresh salads and house-made dips, all prepared with the same attention to ingredients as our in-house menu.”


Family Run, Family Proud

Behind the scenes, Niko’s is very much a family affair. Richard began his law enforcement career 30 years ago, serving the Cuyahoga County Court of Common Pleas Juvenile Division. He later served the Cleveland region as an Officer with the Ohio Adult Parole Authority and the Ohio Parole Board before taking an early retirement from the State of Ohio. Koula, with a background in Director of Executive Recruitment, stepped in to run operations, and daughter Athena, who is a marketing major at Ashland University, leads the marketing efforts. Their son Alex, currently serving in the US Army, is honored at Niko’s Gyros with an Army flag hanging proudly above the counter. 


“A sense of community extends to every part of our business,” says Koula. “We employ local high school students, as well as support area organizations, police, fire and military personnel. We also cater to local businesses, hospitals and community events, bringing people together through food.”

Rooted in Wellness

It’s no coincidence that Greek cuisine is associated with longevity and wellness. In fact, one of the Blue Zones (designated regions where people live exceptionally long and healthy lives) is Ikaria, Greece.


The Mediterranean diet emphasizes fresh vegetables, lean proteins, healthy fats and minimally processed foods, all of which you’ll find on the Niko’s Gyros menu.


Crisp Greek salads are made to order, with freshly chopped cucumbers, tomatoes and onions, then topped with homemade dressing loaded with oregano and parsley. Proteins range from lamb and beef gyros carved traditionally from the spit to marinated chicken, salmon and grouper.



“Just like in the old country, healthy olive oil replaces alternatives like butter, and yogurt-based sauces support gut health,” says Richard. “People don’t always think of fast-casual fare as being healthy. But since everything in our from-scratch kitchen is made fresh with real ingredients, it’s a different experience that’s resonating with busy families in the area.”
